Bittersweet (Duck Egg) Brownies

I’ve been thinking about what to do with my latest batch (dozen) of duck eggs. They are just slightly richer and sometimes a little larger than chicken eggs, though not always bigger. I’m not a huge brownie person, but think about it – rich eggs in lots of chocolate. I can see how this should be a very good thing. I can also see how my friends who really like chocolate will like them – at least I hope so. D&D_2172

16 Tbs unsalted butter, cut into Tbs
8 oz. bittersweet chocolate, broken into pieces (Ghirardelli)
4 eggs – fresh local duck eggs
1 cup sugar
1 cup firmly packed brown sugar
2 tsp. vanilla extract
2 tsp. fine salt
1 cup flour
1/2 cup coarsely chopped pecans (Renfroes’)
1/2 cup coarsely chopped walnuts

Heat oven to 350 degrees. Grease a 9″ x 13″ baking pan with cooking spray and line with parchment paper; grease paper. Set pan aside.

Pour enough water into a 4-quart saucepan that it reaches a depth of 1″. Bring to a boil; reduce heat to low. Combine butter and chocolate in a medium bowl; set bowl over saucepan. Cook, stirring, until melted and smooth, about 5 minutes. Remove from heat; set aside.

Whisk together eggs in a large bowl. Add sugar, brown sugar, vanilla, and salt; whisk to combine. Stir in chocolate mixture; fold in flour. Pour batter into prepared pan; spread evenly. Bake until a toothpick inserted into center comes out clean, 30–35 minutes. Let cool on a rack. Cut and serve.

I cut these into small bite-sized pieces and I am glad I did – they are super rich. In my head, these need to be crumbled into some vanilla ice cream – and that, in and of itself, is rather funny, since I’m (again) not a huge brownie/chocolate fan and really do not care for ice cream either. But I really need to get the boy to get some soft serve from somewhere and give that a try.

The pieces in the center are almost fudge like and the ones on the edges, my favorite, have that little crispy bit of edge. Really, for someone who does not care for brownies, these are pretty damn good. But, rich, oh. so. very. rich.

St. Patrick’s Day – Preview Day, sort of

Unfortunately, I will be out of town for St. Patrick’s Day this year as I have been in several other years and it makes me sad. St. Patrick’s Day was our first date – ish. I do not think the MotH planned it as a date, but I think it was inevitable and now it is probably the second most important date for us – the wedding date being the most important. Or maybe the other way around. Interesting, that both days were really just amazingly relaxed. Guess that is just us. I think that may be what happens when two adults realize they have found the right person for them.  Okay – I shall stop now because that sounds too sappy. I do seem to do that on occasion.

So back to St. Patrick’s Day, since I will not be around in my kitchen, I will replay some of my favorites for you to enjoy. I guess I need to figure out when St. Andrew’s Day (November 30th) is as he is the patron saint of Scotland and I am Scottish on both sides of my family. You do not look like me or like the Boy without some Scottish in you. When I think back, my father really had the look about him, but I just did not recognize as I do now in hindsight. I guess I have to figure out Scottish food, but I’m not entirely sure that will be a good thing. ?

Guinness Chocolate Cake with Cream Cheese Frosting. It’s like looking at a really good pour of Guinness. That is something that has to be done correctly and it takes time – just wait, it will be worth the reward.

Guinness Brownies – I do not like brownies at all. But the first time I made these, well, hell, in small doses they were amazing. And I think the Boy liked the idea that there was stout in his brownies made him happy. Can not say that I blamed him for that.

Well, I will give myself this excuse that summer is not terribly conducive to baking – or cooking – honestly. I can just skip dinner at this time of year.

Brownie Cakes or something like that…

I am not a chocolate person, but this is one of those recipes that I love to make. I have everything on hand – do love this kind of recipe – no grocery store – woo hoo. Also I do like to make the people in my life who like chocolate-things happy. I did try one of these muffins (if you can call them that) and it totally has a great brownie thing going on. I really made these for the Boy and I think he liked it, at least I hope so. I shared a few at our beach local now that we can get out there again – Shaggy’s.

It is kind of funny. I am not much of a sweet person. I guess that is not entirely true. I will try a new recipe, once, and then I am done. Now the MotH is not into sweets at all, but he will try something if I press on him a bit. I do want his opinion – it is important to me. So my “test subjects” are my office, the Boy, and Shaggy’s. I really think they mostly do not mind too much. At least it seems that way to me.  Although I do seem to get blamed for people gaining weight, but ……

1 cup unsalted butter, 16 Tbs.
1 cup chocolate chips, Ghiradelli is my favorite and my go to.
4 large eggs, slightly beaten
1 1/2 cups sugar
1 tsp vanilla
1 cup all-purpose flour

Preheat oven to 325 degrees. Melt the butter and chocolate chips over a low heat on the stove. I do not think this is a place for the microwave. Nope not at all.

Line your cupcake pan with paper liners. This makes 18 cupcakes which to my mind is really kind of annoying. I have a 12 cupcake pan – then had to wait till the pan cooled down to do the last six. Fine – I can do it, but I just do not want to. Guess I am just being fussy – but really?

Beat eggs and sugar together. Sift flour over the egg mixture and add vanilla (I am very liberal with the vanilla – just saying). Fold in the chocolate – butter mixture and there we are – ready to make brownie cakes. Fill cupcake pan wells about 1/2 full.

Bake for about 30 minutes or until a toothpick comes out mostly clean. Just like a brownie will do.

This reminds me of the brownie cookies. They are like small brownies with lots of crusty edges, which to my mind are the best part of a brownie. I am a brownie edge person, not a brownie middle person. Guess it is a personal preference, but I do like a little bit of crunch.

Guinness Brownies

As I have mentioned about a million times, I am not a big chocolate person, but I am a huge fan of Guinness. It was the first beer I really drank (huge story here) and I love it still. It is like having a meal, so I don’t drink it too often. The MotH likes Guinness too and the Boy love brownies, so this just makes sense. I use a Guinness stout, and maybe drink one, the MotH gets the rest, and the Boy gets brownies, and now at his age, a Guinness for himself too. It is a win all the way around.D&D_1246

4 large eggs, room temperature
3/4 cup sugar, superfine*
8 ozs bittersweet chocolate, chopped
4 ozs white chocolate, chopped
6 Tbs unsalted butter
3/4 cups all purpose flour
3/4 cups cocoa
1/4 tsp salt
1 1/4 cup Guinness Stout**
confectioners’ sugar, for dusting

Preheat oven to 375 degrees. Spray with cooking spray, an  8 x 8 baking pan, line with a parchment sling and spray that as well. Over a piece of waxed paper, sift together the flour, salt, cocoa

In a stand mixer, combine sugar and eggs and beat until light and fluffy.

In a microwave bowl,  melt chocolates and butter in 30 second bursts, and stir until smooth. Cool slightly, and mix into egg mixture.

Add flour mixture to egg mixture and beat until smooth.  Whisk Guinness into batter. Pour into prepared pan and bake for 20 –  25 minutes or until a toothpick comes out clean. (Might be longer than you think – it was for me).

Remove from oven and cool on a wire rack. Remove from pan using sling, cut into very tiny squares and dust with confectioners’ sugar.

*Take granulated sugar and whir it in a food processor and then measure out 3/4 cup. Or just use regular granulated sugar, I have.  It does not seem to matter.

**Pour the stout and let the foam settle before measuring.

These brownies are pretty much like fudge. Please cut them in little tiny pieces.
